Scientific studies have shown that ozone improves meat preservation quality, reduces aerobic bacteria, thermophilic bacteria, coliforms, and sulfite-reducing anaerobes, thereby extending the shelf life of meat products.
Washing food with ozonated water reduces the total aerobic count more effectively than conventional washing. Meanwhile, maintaining a disinfected environment with ozone significantly minimizes food safety risks during storage.
Research demonstrates that applying 10–20 μg/L of ozone in storage facilities can extend meat shelf life by 30–40%. Another study on the effect of ozone on microorganisms found that the development of Enterobacteriaceae was inhibited when meat was stored at 2.5–6°C and 92–95% relative humidity.
Continuous ozone exposure at 0.03 ppm for 9 days at 1.6°C and 95% humidity prevented microbial growth on beef carcass surfaces.
